Shahi Paneer Recipe | Royal Indian Cottage Cheese Curry
🫙Ingredients:
200 grams paneer (cottage cheese), cut into cubes
2 medium onions, finely chopped
2 medium tomatoes, pureed
1 tablespoon ginger-garlic paste
10-12 cashew nuts (soaked in warm water for 10 minutes)
2 tablespoons fresh cream
2 tablespoons oil or ghee
1 tablespoon butter
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Salt to taste
Water as needed
Fresh coriander for garnish
🥘Instructions:
1. Prepare Cashew Paste:
Blend the soaked cashews with a little water to make a smooth paste. Set aside.
2. Sauté Onions:
Heat oil in a pan. Add cumin seeds. Once they splutter, add chopped onions. Cook until golden brown.
3. Add Ginger-Garlic Paste:
Add ginger-garlic paste and sauté for a minute till the raw smell disappears.
4. Add Spices & Tomato Puree:
Add turmeric, red chili, and coriander powder. Stir and add tomato puree. Cook till the oil separates.
5. Cashew Paste & Cream:
Add cashew paste and cook for 2-3 minutes. Then add cream and mix well.
6. Add Paneer:
Add paneer cubes and about half a cup of water (adjust for gravy consistency). Cook for 5 minutes on low flame.
7. Finish with Butter & Garam Masala:
Add butter and garam masala. Mix gently. Simmer for another 2 minutes.
8. Garnish & Serve:
Garnish with fresh coriander and serve hot with naan, roti, or rice.
