Bagara Rice Recipe
1 cup Basmati rice (washed and soaked for 30 minutes)
2 tbsp oil
1 tbsp ghee
1 medium onion (thinly sliced)
2 green chilies (slit)
1 tsp ginger-garlic paste
Whole spices:
1 bay leaf
3 cloves
1 small cinnamon stick
2 green cardamoms
½ tsp shah jeera (caraway seeds)
2 cups water
Salt to taste
Fresh coriander leaves (for garnish)
🥘Instructions:
1. Heat oil and ghee in a pan or pressure cooker.
2. Add whole spices – bay leaf, cloves, cinnamon, cardamoms, and shah jeera. Sauté for a few seconds until aromatic.
3. Add onions and cook until they turn light golden brown.
4. Add ginger-garlic paste and green chilies. Sauté for 1–2 minutes until the raw smell goes away.
5. Add soaked rice. Gently stir for a minute to coat the rice with the flavors.
6. Pour water and add salt. Mix well.
7. Cover and cook on low heat for 10–12 minutes until the rice is cooked and fluffy. (If using a pressure cooker, 1 whistle on medium flame is enough.)
8. Garnish with chopped coriander and serve hot.
Serving Tip: Pairs perfectly with any curry, dal, or mirchi ka salan.
